Leftover Grilled Rice

So did I mention that I bought in on a cow share?  Well I did.  It’s actually called Philly Cow Share and it’s pretty  sweet.  You can read all about it on their site but suffice to say, this one time investment has provided me awesome beef all summer.  I really can’t complain.  Myself and two friends split the 1/8th portion and that was 15lbs of meat, all divided up into the “known cuts”

So, since I decided to have one of the burgers and they are packaged in quanties of 4, I had 3 leftover to do something with.  Why not grill them, throw in some grilled veggies and make a compound rice full of grilled tasty things?  I didn’t have an objection either so I did it.  I might not be gourmet but it was certainly satisfying.

Vegan Blueberry Ancho Chile Risotto

I received a cookbook a couple years ago for Christmas entitled The Silver Spoon.  It’s got a huge amount of italian recipes in it and it’s one of my most referenced texts for cooking techniques and general recipe guidance.  In that book, there is a recipe for blueberry glazed pork chops.  Don’t ask my why I came up with blueberry risotto after looking over that recipe, but I did.  I just got a fresh batch of ancho chile powder so I decided to throw that in there too.  The results, well, if you like fruit used in savory applications and don’t mind a little heat, you might like this one.

Spicy Tuna Bowl

Spicy Tuna Bowl

This is a quick & easy one because I forgot today is Friday and this is all I have time to write up. Fun! Anyway, it still tastes real good to your mouth.

The kimchi furikake in the recipe is another version of the stuff I talked about last week. The kimchi stuff contains dried Chinese cabbage, chilis, shallots, onions, ginger, garlic, chives, carrots, radish, sesame seeds, turnip greens, wasabi, seaweed & etc. Lots of stuff going on there but it is nowhere near as complex, pungent or spicy as the real deal. Adds a nice contrasting element to the sweetness of the teriyaki-style glaze, though.

Takeout Spicy Salmon

When I started to seriously get into cooking, I mostly taught myself by recreating my favorite takeout dishes. It was a low risk, high reward way to figure things out. So other day when I had a craving for some White Boy Special (General Tso’s Chicken w/ pork fried rice) I decided to check what I had available and make it at home instead. After checking my fridge, I switched it up and did a General Tso’s/chili black bean/Sichuan-style thing.

Spicy Smokey Salmon Rice

Spicy Smokey Salmon Rice

This dish should be called “Asian Clusterfuck.”

I had some leftover smoked salmon which I think is one of the most delicious things in the world.  I also wanted to make something simple for my one night home in a long time.  I’m a huge fan of the bamboo shoots in chili oil and I’m working on trying to incorporate sichuan peppercorns in as many things as possible. I might be addicted to them.  I recently read an article saying how rice is one of the ingredients that is consumed by most major cultures across the world.  I remembered that I had some rice in my cabinet and thought, “hrmm, I should probably make that.”  Finally, a fried egg pretty much makes anything better.
