Mango Salsa

As a topping to the kalua pork, we came up with the idea to throw together a quick mango salsa.  It seemed Hawaiian-esqu enough and also, mangoes were on sale at Whole Foods.  Why not put them together right?

Typically, I tend to be be a bit heavy handed when spicing things.  What can I say, I really enjoy bold flavors.  This recipe however is actually very well balanced.  You really only need a tablespoon or two of the lime juice and the zest goes a long way in it.  Similarly, with the jalapeno, you might want to rib it before you mince it up. It all depends on your preference.  I also love the trader joe’s orange vinegar for another citrus flavor.

Bonus points, it’s vegan.

Ceviche Style Breakfast Tacos

Summer is in full swing.  I’m wearing shorts and flip flops today.  Sure, it was 64 when I left this morning but who cares?  By the time I take my run around lunchtime, it will be nearly 80 degrees.  When the weather is warm, I want to eat fruit and lots of it.  Seriously, this year I am having voracious cravings for fresh fruits and I plan on trying to incorporate them in as many things as possible.

I guess I must have been thinking about ceviche when I came up with this.  I love the flavors of lime and orange and well, when you’ve got an avocado, they all just sort of mix very well together.  The acidity from the fuits keep it from turning brown.  Scramble up some eggs, get your favorite tortillas and have yourself some brunch.  Don’t forget the coffee, it’s very important.

Shrimp Tacos

Shrimp Tacos

The recipe came together as a failed attempt of another recipe.  I was sitting around and I realized that I wanted to try working with jicama.  I have eaten it before but I had never actually bought one and worked with it.  Fortunately, I was able to find this recipe from Bobby Flay and I was all set to try it out.  I went to Whole Foods and low and behold, no jicama!  I had most of the pantry ingredients laying around so I just bought the head of cabbage and decided to try it anyway.  Since that recipe uses both jicama and the cabbage, I used half of the cabbage and just went to town.  Midway through making it, I realized how fresh and fun it tasted and thought it would be a great topping on a taco.  Fortunately, I had some shrimp in my freezer.  A quick sear of those in the cast iron pan and I was in business.  The tahini at the end just ups the richness factor of this dish.  Very fun, tasty and great to look at.

Slow Cooker Indian Chicken

I originally was given the idea to try this from a friend who told me about this recipe.  After initially tasting it, I wasn’t thrilled to be completely honest.  I guess I had high expectations from all of the chicken tikka masala I’ve consumed around Philadelphia.  I wasn’t even planning on blogging it until…

I let it sit overnight.  Even just after a couple of hours in the fridge, the sauce took on a whole new set of flavors not initially present.  It might have just been too hot or perhaps it really needed a little more time.  Either way, this is a tasty dish.  I definitely will not refer to it as chicken tikka masala but it is an indian inspired chicken dish.  The real bonus about this recipe is the effort level.  In my mind, it’s so simple compared to what you get out of it that even the most amateur home cook can get it right.  It’s definitely worth a shot.

Potlucky Chipotle Meatballs

I was lucky enough to receive an invite to a Philadelphia Foodie Potluck.  It was hosted by Jackie of Cupcake Karma.  Notables in attendance were Brian of Bridges, Burgers and Beer and of course Chris, from ThisIsAHotJam who you may recognize from his Friday ZP posts.  Others who showed were Lou and Gwen, Erin, Sarah, and the crew from Homespeakeasy.  Needless to say, it was a food extravaganza.  I’m quite sure that we could have fed a small army with the amount of food that showed up here.

As usual, I was pressed for time.  I didn’t want to show up empty handed.  With all the posts that we do here at ZP, I should really be able to come up with something.  My co-author whipped up a new dish and I thought, “fine I guess I can quit my whining and come up with something fast.

The recipe skips a few steps by using sausages and just splitting them from the casing.  You have the benefit of someone having already seasoned them for you.  Of course, you can still augment and that’s exactly what we do here.  I went with cilantro both in the meatballs and in the sauce because it has such a unique flavor.  The lime zest also just seemed like a natural pairing.  You can serve these with fresh tortillas or maybe with some polenta.  They will go over very well and the effort level is rather minimal.
