Ceviche Style Breakfast Tacos

Summer is in full swing.  I’m wearing shorts and flip flops today.  Sure, it was 64 when I left this morning but who cares?  By the time I take my run around lunchtime, it will be nearly 80 degrees.  When the weather is warm, I want to eat fruit and lots of it.  Seriously, this year I am having voracious cravings for fresh fruits and I plan on trying to incorporate them in as many things as possible.

I guess I must have been thinking about ceviche when I came up with this.  I love the flavors of lime and orange and well, when you’ve got an avocado, they all just sort of mix very well together.  The acidity from the fuits keep it from turning brown.  Scramble up some eggs, get your favorite tortillas and have yourself some brunch.  Don’t forget the coffee, it’s very important.

Eggs in the Hole

Eggs in the Hole

A while ago, when I was a kid, I saw this movie called Moonstruck and in the film, at one point, the mother (Olympia Dukakas) was making eggs in this sort of style.  I remember asking my mom to make those for me and they’ve always been a fun and quick breakfast.  Make sure your pan is hot so the bread and eggs cook evenly.  This is a fun dish for kids but can also satisfy an adult.

Smoked Salmon Scrambled Eggs Lemon Crema

I originally got the idea for this from an epicurious recipe.  I really really love smoked salmon.  This dish is very simple and tastes amazing.  Truthfully I probably could have done a better job on the photos if I had a piping bag but I don’t.  The crema looks blobbed on there but it does taste very good.  Have this on a weekend for a low stress brunch and you’ll have plenty of energy for your day.

Japanese Omelette with Curry Hollandaise

This, like most of my recipes, is composed of things that I purchased without purpose. I had some remnants of last weekend’s trip to the Headhouse & the Italian Market which needed to be used; circumstances such as those, a reliable option is an omelette. (Alt. chili.) Combined with a few staples like butter and curry powder, my improvised breakfast turned into some next level ish.

(N.B. I did not include the recipe for the curry ketchup picture below, but that was an earlier re-use of some leftover crushed San Marzano tomatoes. Reduce tomatoes with cider vinegar, dark brown sugar, pomegranate molasses, curry powder & tamari. Puree then put it through a sieve. Should keep for a few weeks in the refrigerator.)

Bacon Scramble Parsley Oil

I do love weekend breakfasts, provided I’ve had a tame enough Friday or Saturday evening, I look forward to waking up and making something highly flavorful.  This dish accomplishes that goal.  You can have it ready in about 10-15 minutes and it’s really bright and tasty.  Bacon makes everything taste better, but it adds a decent amount of fat and “heaviness” to any dish.  The parsley really cuts through that fat layer and leaves this tasting perfectly balanced.
