Beef Curry Tagliatelle

Just got back from Italy where I ate a lot of good noodles. One of the best dishes I had was tagliatelle with sea urchin, dressed simply with butter, garlic, black pepper & parsley. It was darn good. There was also a bunch of other stuff but this was tops. So, tagliatelle: slightly wide noodle that goes well with meat sauces. I hit up local Italian specialty shop Severino for some of their dried pasta; their product is some of the best if you opt not to make it yourself.

The other life thing happening now that contributed to this was taking part in a cow share. (Vinny is in on it too.) A cow share is, perhaps a bit obviously, where a bunch of people divvy up a whole cow. I received a bunch of cool meat, the bulk of which was ground beef.

Again on the subject of Italy. After returning home from the trip, I immediately hit up Italian Market for cheeses and butters. Among the spoils of this shopping excursion was baked ricotta, with a texture similar to paneer cheese. With that thought, the inspiration for beef curry tagliatelle, which is pretty much Indian saag paneer recast as a bolognese sauce for pasta.

Japanese Roast Pork Sandwich

Japanese Roast Pork Sandwich

This recipe seems elaborate, but it was actually the result of a bunch of leftovers from other recipes. The pork butt was purchased for porchetta (at work), the dashi, pork skin jus & Japanese mustard greens for pork ramen (at my leisure). Looking at these ingredients, I decided to give a classic Philly sandwich a try: roast pork & bitter greens on a seeded roll. The flavor profile has shifted East and the provolone has been omitted in favor of a slightly richer, more flavorful gravy for the pork but this is otherwise pretty straightforward. Totally satisfying lunch.

N.B. The pork skin jus is an adaptation from The Art of Living According to Joe Beef: A Cookbook of Sorts. For my money, it was the best cookbook released in 2011 and it has been a great source of inspiration in the kitchen.

Vegetarian Indian Tacos

This dish is partially inspired by some sweet potato tacos I ate at South Philly Tap Room a few months ago. I had in my possession some fresh tortillas from Tortilleria San Roman (a Z&P favorite) and a bunch of stuff in my refrigerator I needed to clear out, so I decided to give it a try. This turned out to be an incredibly satisfying impromptu dinner.

Japanese Omelette with Curry Hollandaise

This, like most of my recipes, is composed of things that I purchased without purpose. I had some remnants of last weekend’s trip to the Headhouse & the Italian Market which needed to be used; circumstances such as those, a reliable option is an omelette. (Alt. chili.) Combined with a few staples like butter and curry powder, my improvised breakfast turned into some next level ish.

(N.B. I did not include the recipe for the curry ketchup picture below, but that was an earlier re-use of some leftover crushed San Marzano tomatoes. Reduce tomatoes with cider vinegar, dark brown sugar, pomegranate molasses, curry powder & tamari. Puree then put it through a sieve. Should keep for a few weeks in the refrigerator.)

Cocoa Curry Pork Rind Rice Krispies

This recipe started out as a post-Schmitter binge fat kid food hallucination. Somehow in our meat delirium on the way back from McNally’s Tavern we started on the subject of pork rind rice krispies. I had a flashback to the conversation the next day and decided to implement this crazy/brilliant idea, with the addition of cocoa and a hint of curry. I also had in stock some Stay Puft marshmallowsa real product!–taking this endeavor to the next level.

Pork skins, chocolate-y sugared cereal, curry, Ghostbusters caffeinated marshmallows… the only thing keeping these treats from being the most ridiculously over the top things ever is, like, pot butter. (Not that I am advocating that or anything.) This was a fun and entirely unnecessary thing to do in the kitchen. I regret nothing.
