Recipe Remix – Burger With Confit Tomato and Grilled Eggplant

Ahh finally back from vacation.  I was just down in Austin for a few days and what a spectacular city that is.  Honestly, I was incredibly impressed with the food, the culture, the nightlife, parking.

Anyhoo, I promised a recipe remix with the tomato confit and this is it.  After you make the confit tomato, you don’t even need ketchup.  The grilled eggplant is a fun addition to this and pulls in a little more char flavor for the burger.  Having it on the bottom helps it absorb some fat from the burger and keeps the bread from getting soggy.

Lazy Man’s Patty Melt

Sometimes, life can just kick the ever loving crap out of you.  We’ve all been there.  You walk into work and there is magically a brand new deadline of tomorrow for a mountain of work that you were not privy to previously.  It’s days like these that call for a meal like this one.  When I feel chained to my desk I dream about going home and grilling something.  The promise of fire and fresh air help get me through.

I chose to do the onions in the cast iron on the grill too.  They cooked up pretty quickly and it made it so there was next to no cleanup for this recipe.  I brushed some oil on the bread and toasted it right alongside the burger cooking.  This one was simple and fun.  Sometimes you see a patty melt slathered with russian dressing.  I’m not a fan of it that way so I didn’t use it in the recipe.

Deconstructed Burger

Deconstructed Burger

Burgers, we’ve all heard of them.  They have somewhat of a mystique in this country.  There are people that even have entire websites dedicated to them.  You can find them on pretty much any restaurant’s menu.  In recent years, even the nicest of places have begun offering “gourmet” versions of burgers to appeal to discerning palates.  Personally, I love all the attention the burger receives.

This recipe, like many of them here at the ZP battle station was a post run meal.  I just decided to take all the ingredients of a burger and blow them up.  I like stacking foods and I try to get as many veggies as possible.  This dish puts the burger in the background a bit but it doesn’t lose it.  I also wasn’t craving fries during or after eating it because the greens just brought so much flavor to the party.  This dish is nice for a casual dinner or could be a cool brunch topped with a fried egg.
