Hey, we’re back!  I know you missed us so let me fill you in very quickly.

I got a new job.  I finally work in Center City.  Yes, I am walking/biking to work.

I took a week between my last position and this current one to relax a bit and well, have a staycation.  It was well worth it.

So in other news, this recipe.  Here at ZP, we are no strangers to the pork belly.  This dish was actually not prepared in the Zennpotatoes Test Kitchen.  @ClearlyMental was gracious enough to allow me to take over his kitchen and grill to pull this one together.  Special thanks to @thisisahotjam for helping with ingredients and recipe formulation.

Baba Ganoush

Okay, so we all know hummus.  We’ve made it a few times here and it’s delicious but it’s the not end all be all of dips right?  It’s nice that it’s so popular and you can find it at almost any decent grocery store and as an appetizer on most restaurant menus.  It’s popular.  This, however, is a culinary journey and we must sally forth!

Enter baba ganoush.  I’ve had this many times out but the prospect of making it at home always seemed daunting to me.  I guess I just didn’t know how to work with the whole eggplant.  I remember once in college someone told me to roast an eggplant and eat it and it would be awesome.  Well, that was back before I knew anything about cooking and also they conveniently forgot to mention poking holes in it.  It turned out to be a disaster and the concept of roasting eggplant has scared me ever since.  Thankfully this dish helped me get over my fear.

I used my grill because, hey, I love the thing and almost anything that comes off it takes wonderful.  You poke holes in the eggplant and roast it until it’s ultra soft.  You then cut it, put it in the processor and basically make hummus.  It really couldn’t be easier.

Chickpea Black Bean Hummus

Ok so we’ve made hummus before and it turned out pretty well.  Why stop there right?  In continuing this vegan-ish kick, I’ve been trying to keep vegan snacks around the house that I can eat when I’m craving something and not break my good streak.  Hummus always satisfies me.

When I first started making hummus, I was skeptical of adding water.  I didn’t think it really contributed any flavor so why would I want it in my dip?  Well, instead of contributing, it mutes the rest of the flavors a bit and makes the whole dish more appealing.  I keep the processor running and add it in slowly until I achieve the desired consistency.

Last note on this recipe, it comes out a really cool lavender color.  That’s always fun and looks great in a white bowl.

Duqqa Beer Can Chicken

During my recent trip to Canada, I was lucky enough to visit one of Edmonton’s indoor farmer’s markets.  We ended up purchasing a few items there for the dinner that we cooked during the freak snowstorm that happened Saturday night.  Fortunately, I was able to bring back a spice blend called Duqqa.  The spice blend that I picked up pretty much sticks to what is referenced in that wikipedia article.  I immediately thought of putting it on chicken and cooking it, which led me to today’s recipe.

After the easter ham, I knew that I was able to cook low and slow on my grill.  I took that approach today with this recipe.  I ran it at about 225 until it was cooked through (safe cooking temp about 180 for chicken before carry over)  The result was one tasty bird.  While this recipe takes some time, it saves you in prep work which takes all of 5 minutes.

Guest Post – Portuguese Style Crab Cake

For today’s post, I’m featuring a recipe from one of my best friends Sergio.  I’m fortunate to have two life long friends (one from kindergarten and one from 2nd grade) and I’m really happy that they both love food and cooking.  Sergio has had a long history of being around great food and he’s decided to share one of his house-made dishes.  This dish was both fun to make and turned out to be delicious.  It’s clear that this guy knows what’s up in the kitchen.

As Memorial Day is here and the Summer is upon us, to me it’s all about spending time with family and friends. Beaches, Bubbly, and BarBeQues!!  The best memories are down the shore (if you’re from Jersey) and having some of the best fresh seafood. That brings me to my first recipe post. The Portuguese Style Crab Cake. There really isn’t anything Portuguese about it other than a Portuguese guy made the dish and it’s delicious. So enjoy!!  And special thanks to Vinny and the Zen n Potatoes crew for having me as a special guest and for all the wonderful photos.
