A while ago, when I was a kid, I saw this movie called Moonstruck and in the film, at one point, the mother (Olympia Dukakas) was making eggs in this sort of style. I remember asking my mom to make those for me and they’ve always been a fun and quick breakfast. Make sure your pan is hot so the bread and eggs cook evenly. This is a fun dish for kids but can also satisfy an adult.
A fast cheap and fun meal that satisfies. Eggs in the hole are a wonderful fun breakfast to make with no fuss.
Ingredients
- 2 eggs
- 2 pieces of bread
- 2 slices of bacon
- 1 tbsp butter
- 1 tbsp olive oil
Instructions
- Set a medium pan over medium heat and when hot, add bacon strips. Cook bacon turning until crispy, about 5 minutes per side. Remove to paper towels to dry. Wipe pan clean.
- Using a small cup or a knife, cut a hole out of each piece of bread.
- Melt 1 tbsp of butter in the pan with the olive oil and add the hollowed out bread slice. Crack eggs directly over the holes in the bread so the yolks are centered in the hole. After about 3 minutes, you will see the bottom of the egg is cooked. Flip gently and cook for another few minutes on the other side. This should give you medium eggs and crispy bread.
- Serve as is or with ketchup / hot sauce.

Ah! This was my number one favorite breakfast growing up. My family called it bird in the nest.

I’ve heard a few names for it over the years. I think my favorite is still bulls-eys eggs.
