This recipe started with a photograph.
I was reading one of my favorite Asian food blogs, EatingAsia, when I saw that image and immediately knew I must eat it. I searched the internet for a recipe, which did not turn up much in the way of useful results; I found similar dishes, but none really matched up with the description from the blog. My next move was to check my go-to reference cookbook, The Complete Asian Cookbook, in which I located a recipe for kaukswe kyaw (reproduced in the image gallery below). Even though this was not exactly on point either, it gave me enough of a guideline that I could make a go at the khauk swe thohk using the cookbook technique combined with the blog description. It turned out pretty effing good.
Khauk Swe Thohk is a (mostly vegetarian) Burmese egg noodle dish redolent with the strong flavors of fish sauce, chiles, garlic & onions.
Ingredients
- 1 c egg noodles
- 1 small white onion or shallot, sliced
- 1 tbsp ginger, minced or grated
- 1/3 c scallions (green part), cut into 1-2" pieces
- 1 c baby bok choy, chopped
- Juice of one (1) lime
- 1 tbsp fish sauce
- 1 tbsp chili oil
- 1 egg, hardboiled and quartered
- 1 tsp fried garlic
- 1 tsp fried shallots
- Salt
- Black pepper
- Neutral oil (for cooking)
Instructions
- Cook egg noodles per package instructions. Mix the lime juice, fish sauce & chili oil while the noodles cook.
- Drain the noodles and cool. Add the sauce to the noodles and toss together, to prevent them from clumping together. (N.B. If you did not hardboil the egg ahead of time, there is sufficient time during the remaining steps of this recipe to do that now.)
- Add oil to pan over medium-low heat. Add onions and ginger, season with salt & black pepper, then cook until they begin to soften and become fragrant, ~5 min.
- Add bok choy and scallions to the pan. Allow the bok choy to wilt slightly.
- Add the egg noodles (and sauce) to the pan. Toss everything together and cook another ~2 min.
- Plate everything. Garnish with quartered hardboiled egg, fried garlic & shallots.
- Enjoy!
