Moroccan Lentil Soup

I spent the summer of 2007 doing study abroad in Cairo. A pescetarian at the time, with a tenuous grasp on spoken Arabic and complete & utter ignorance of written Arabic, my dining options were somewhat limited: my diet was heavy on kushari, fuul, falafel & endless honey-laden sweets. (Or french fries, ice cream & American chain restaurant food when I was feeling homesick.)

In the brutal summer heat, I often desired something a bit lighter, and on those occasions I opted for lentil soup. Upon returning home, it became a mainstay in my repertoire. The recipe below makes 4-6 servings.

Summery Quinoa and Avocado Chicken

Quinoa is a new thing for the ZP test kitchen.  I’ve heard many people tout is as a superfood and I’ve certainly seen it at Whole Foods enough in their prepared foods section.  While I’ve eaten it more than a couple of times, I’ve never made it at home.  How hard could it really be?

The answer: It isn’t.  Most quinoa you can purchase has already underwent some minimal processing inorder to remove the saponins which make it bitter tasting.  For the quinoa opening night, I chose a box that I found that claimed to need “no rinsing”.  After that, it’s 1 part super amino acid rich seed (quinoa) to two parts liquid.  I give you the “gold of the Incas.”

Onigiri (Japanese Rice Balls)

Onigiri are just rice balls filled with stuff; as unpretentious as can be. Quick, simple, made with whatever ingredients you have available. After RSVPing to a potluck to be held at the end of a busy weekend, they were also my best option for not showing up empty-handed.

Honestly, the most difficult part of making these is waiting long enough for the rice to cool down. Make sure to run your hands under cold water before forming these, and then again every few, it will be a big help.

My mom-mom used to pack these for my lunch in elementary school; Version B is a variation on those. Two of these are a filling meal.

Grilled Cheese and Craft Beer Pairing World Cafe Live

This was a pretty sweet event.  A variety of craft beers were presented as well as a nice selection of cheeses and preparations.  Best of show pairing was certainly dessert.  The sweetness of the boucheron and pecans paired with the spicy ginger beer was a revelation.  Other than that, the brie with pear sauce and candied walnuts was quite delectable.

Recipe Remix – Goat Cheese Burger and Beet Salad

Ok, this recipe is simple.  It only has one photo because there isn’t much to it.  If you’ve already made the beet salad, the length of time it will take you to make this is however long it takes you to make a burger and crumble some goat cheese.  I recommend a cast-iron pan if a grill is not available.
