I was about to leave for work today when my partner in crime called me and told me he’d be 10 minutes late. I agreed and said I would wait for him. I had been craving a breakfast sandwich and now I had a limited amount of time to accomplish it. Think Iron-Chef on a much smaller scale and without the trout ice cream.
Feta and Sundried-Tomato Breakfast Sandwich
- 2 eggs
- 1 tbsp butter
- 2 slices multi-grain bread
- 3 tbsp of crumbled feta
- 2 tbsp of sundried tomatoes in oil
Put a 10 inch skillet over medium heat. Measure out feta and sundried tomatoes. Finely chop sundried tomatoes.
Toast slices of bread to desired doneness. Sprinkle 1 side of each slice with the chopped sundried tomatoes.
Whisk 2 eggs and 1/2 tsp warm water in a bowl. Melt 1 tbsp of butter in pan and add eggs. Move around to create a scramble with large curds. When eggs are mostly set, fold in feta and remove from heat. Continue mixing around until eggs set.
Put eggs on toast, form sandwich and eat or wrap in tin-foil until you get to work. Eat at your desk and make everyone jealous.
